This small knife can handle any culinary work of peeling and chopping vegetables. The centre pointed tip is especially popular in Southern Germany and Switzerland. Its shape is perfectly formed for coring fruit such as apples or pears.

Best used for: fruit and vegetables, peeling and coring, fish and meat, cutting with or without a chopping board

Ice Beech or “Eisbuche” is one of the most distinctive woods you will ever find. Created with sustainable practices from beech trees of the Black Forest, Ice Beech is created as the wood undergoes a natural process involving extended exposure to cold weather and moisture to produce its uniquely veined character and rich contrast.

    Care Instructions

    • Carbon steel, beloved by chefs and bladesmiths, remains sharp without intervention for a long time.
    • Opposed to stainless steel, carbon blades may rust over time.
    • Robert Herder uses a special “blue-glazing” polishing technique to help temper this, but we recommend using their maintenance kit through the life of the knife.
    • Discoloration of the blade over time, but not rusting, is perfectly normal.
    • The darkening of the metal is typical of well-used carbon steel products.
    • Wipe after use.
    • Not dishwasher safe.
