The flavor is mild compared to other radishes and looks more like a carrot. Though mild in flavor, they are rich in nutrients—the roots contain high levels of vitamin C, potassium and folate while the leaves contain beta-carotene, calcium and iron. The mild flavor of this Daikon makes it a great addition to salads. Roots can also be peeled, sliced, grated, diced for soups and stews, boiled whole or dehydrated as strips. Rabbits, goats, cows, hogs will enjoy the roots and chickens relish the tops!
