In 1827, confectioner Bélisaire Boissier created the “Ball” candy, whose round shape symbolizes the City of Paris. He first developed a cherry-flavored version using Montmorency cherries, carefully extracting their aroma in a process reminiscent of the essential oil distillation techniques used for flowers in Grasse.

Over time, the Ball Candy evolved into a refined assortment of flavors, including a floral collection featuring violet, rose, and poppy.
